blender popsicleWith this heat wave in Vancouver this summer, I have to admit I have been craving something cold to snack on. It’s easy to find yourself in the grocery store and pick up something prepared, however I was surprised to see the sugar content in some frozen treats- many had a minimum of 20 grams of sugar which is the equivalent to 5 teaspoons of sugar!!

So it got me thinking….I whipped up this recipe one morning so when I returned home from work I could enjoy it in the evening. I had made extra and enjoyed it as a mid-morning smoothie. There are so many flavour combinations to try! I can’t wait to keep experimenting.

Healthy Homemade Popsicles

popsicle

INGREDIENTS

2 cups organic almond milk
1 large banana
1 cup wild frozen blueberries
2 tablespoons local unpasteurized honey
1/4 cup unsweetened shredded coconut

INSTRUCTIONS

1. Place all ingredients in the high-powered blender and process until smooth. Pour into popsicle molds and freeze for 8 hours. I love my Zoku popsicle molds because they are BPA and phthalate free. Not to mention, super convenient, the silicone mold peels off so easily when the popsicle is ready.

Enjoy!
